Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 pound mushrooms sliced
  • 1 teaspoon turmeric powder
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic, sauté until onion is translucent.
  • Add sliced mushrooms to the pot and cook until they are browned.
  • Stir in turmeric powder and cook for 1 minute.
  • Pour in vegetable broth and bring the mixture to a boil.
  • Reduce heat and let it simmer for 15 minutes.
  • Use a blender or immersion blender to puree the soup until smooth.
  • Return the soup to the pot and stir in heavy cream.
  • Season with salt and black pepper, then heat through without boiling.
  • Remove from heat and let the soup rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

For a richer flavor, consider using a mix of different mushroom varieties such as cremini, shiitake, or portobello. Adding a splash of white wine while sautéing the mushrooms can also enhance the depth of taste. If you prefer a thicker consistency, reduce the amount of vegetable broth slightly or add a cornstarch slurry.
