Ingredients
  

  • 1 cup unsalted butter melted
  • 2 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cup apples peeled and diced
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the melted butter and granulated sugar until combined.
  • Add the eggs and vanilla extract to the bowl and whisk until smooth.
  • Sift in the all-purpose flour, cocoa powder, and salt, and fold the mixture until just combined.
  • Pour the brownie batter into a greased 9x13 inch baking pan, spreading it evenly.
  • In a medium saucepan, combine the diced apples, brown sugar, cinnamon, nutmeg, ginger, and lemon juice.
  • Cook the apple mixture over medium heat until the apples are tender and the mixture thickens, about 8-10 minutes.
  • Spread the spiced apple pie topping evenly over the brownie batter in the baking pan.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out mostly clean.
  • Allow the brownies to rest in the pan for 15 minutes before slicing and serving.

Notes

For extra gooey brownies, ensure not to overbake them; check a few minutes before the suggested time as ovens may vary. The spiced apple topping can be prepared ahead and stored in the refrigerator for up to two days, adding a convenient prep option.
