Ingredients
  

  • 1 pound pork shoulder cubed
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup roasted green chilies chopped
  • 3 medium potatoes diced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the cubed pork shoulder and brown on all sides.
  • Remove the pork and set it aside.
  • In the same pot, sauté the chopped onion until translucent.
  • Add the minced garlic and cook for an additional minute.
  • Pour in the chicken broth and bring to a simmer.
  • Return the pork to the pot along with the roasted green chilies, diced potatoes, ground cumin, salt, and black pepper.
  • Stir well, cover, and let it simmer for 45 minutes until the pork and potatoes are tender.
  • Stir occasionally to prevent sticking.
  • Once cooked, remove from heat and let it rest for 10 minutes.
  • Stir in the chopped fresh cilantro before serving.

Notes

For the best flavor, use freshly roasted green chilies if possible, as they add a smoky depth to the stew. Adjust the amount of chilies to your heat preference; more can be added for a spicier dish. Serve with warm tortillas or crusty bread to complement the stew’s rich flavors.
