Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound pork shoulder cubed
  • 1 large onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups green chilies roasted and chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 potatoes peeled and diced
  • 1 cup corn kernels
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat the olive oil in a large pot over medium-high heat.
  • Add the cubed pork shoulder to the pot and brown on all sides.
  • Remove the pork and set aside on a plate.
  • In the same pot, add the diced onion and minced garlic, sautéing until the onion is translucent.
  • Return the pork to the pot and pour in the chicken broth.
  • Stir in the roasted green chilies, ground cumin, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes.
  • Add the diced potatoes and corn kernels to the pot.
  • Continue to simmer for an additional 20 minutes until the potatoes are tender.
  • Stir in the lime juice and chopped cilantro, then remove the pot from heat.
  • Let the stew rest for 15 minutes before serving.

Notes

To enhance the flavor of your Green Chili Stew, consider roasting your own green chilies for a smoky depth. Additionally, adjust the spice level to your preference by adding more or fewer chilies. For a thicker stew, mash a few of the cooked potatoes directly in the pot before serving. Serve with warm tortillas or bread for a complete meal.
