Ingredients
  

  • 1 cup green lentils rinsed
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent.
  • Stir in minced garlic, diced carrots, and diced celery, and cook for 5 minutes.
  • Add cumin and coriander, and stir until fragrant.
  • Add rinsed lentils, vegetable broth, and bay leaf to the pot.
  • Bring to a boil, then reduce heat and simmer for 30 minutes or until lentils are tender.
  • Season with salt and pepper to taste.
  • Remove bay leaf and stir in lemon juice.
  • Serve hot and garnish with fresh parsley.

Notes

For an even richer flavor, consider adding a pinch of smoked paprika or a dash of turmeric during cooking. If you prefer a creamier texture, blend a portion of the soup and return it to the pot. Adjust the thickness by adding more broth as needed.
