Ingredients
  

  • 8 ounce elbow macaroni
  • 1 tablespoon olive oil
  • 2 cup fresh spinach leaves packed
  • 1 cup fresh basil leaves packed
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 clove garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 cup breadcrumbs

Instructions
 

  • Cook the macaroni in a large pot of boiling salted water until al dente.
  • Drain the macaroni using a colander and set aside.
  • In a blender, combine spinach, basil, milk, and garlic and blend until smooth.
  • Pour the blended mixture into the pot and heat over medium heat.
  • Stir in mozzarella, Parmesan, salt, pepper, and nutmeg until the cheese is melted.
  • Add the cooked macaroni to the pot and stir until well combined.
  • Transfer the mac and cheese to an oven-safe baking dish.
  • Sprinkle breadcrumbs evenly over the top.
  • Bake in a preheated oven at 350°F (175°C) for 10 minutes or until the top is golden brown.
  • Let the dish rest for 5 minutes before serving.

Notes

For extra creaminess, you can add half a cup of ricotta cheese before baking. To enhance the flavor, consider adding a pinch of cayenne pepper or a dash of hot sauce to the cheese sauce. If you prefer a vegan version, substitute the dairy products with plant-based alternatives, ensuring they melt well.
