Grilled Cheese Tomato Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can crushed tomatoes 28 ounces
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 8 slices bread
  • 4 tablespoons butter softened
  • 8 slices cheddar cheese

Instructions
 

  • Heat olive oil in a saucepan over medium heat.
  • Add chopped onion and garlic, sauté until softened.
  • Stir in crushed tomatoes, vegetable broth, sugar, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Use a blender to puree the soup until smooth.
  • Stir in heavy cream and allow to heat through.
  • Butter one side of each slice of bread.
  • Place bread butter-side-down in a frying pan over medium heat.
  • Top each slice with a slice of cheddar cheese and another slice of bread, butter-side-up.
  • Cook until the bread is golden brown and the cheese has melted, flipping once.
  • Serve grilled cheese sandwiches hot with the tomato soup.

Notes

For extra flavor, try adding fresh basil or a pinch of red pepper flakes to the soup. You can also experiment with different types of cheese or bread for the sandwiches to suit your taste preferences. Remember to keep a close eye on the grilled cheese to avoid burning, and consider using day-old bread for better crispiness.
