Ingredients
  

  • 4 pieces pork chops bone-in
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a small bowl, combine olive oil, salt, pepper, garlic, paprika, and thyme.
  • Brush the pork chops on both sides with the spice mixture.
  • Place the pork chops on the grill and cook for 5-6 minutes per side.
  • Use a meat thermometer to ensure the internal temperature reaches 145°F.
  • Remove the pork chops from the grill and let them rest for 5 minutes before serving.

Notes

For best results, bring the pork chops to room temperature before grilling to ensure even cooking. Additionally, avoid flipping the chops too often to develop a nice sear and enhance the flavor. If you prefer a smokier taste, consider adding wood chips to the grill.
