Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • 1 onion chopped
  • 2 clove garlic minced
  • 1 red bell pepper diced
  • 2 tomatoes diced
  • 1 cup fish stock
  • 1/2 cup white wine
  • 1 teaspoon dried oregano
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a mixing bowl, combine shrimp, olive oil, salt, black pepper, smoked paprika, and lemon juice.
  • Grill the shrimp for 2-3 minutes on each side until pink and slightly charred.
  • In a large pot, heat olive oil over medium heat and sauté onion and garlic until translucent.
  • Add red bell pepper and tomatoes to the pot and cook for 5 minutes until soft.
  • Pour in fish stock and white wine, then bring to a simmer.
  • Stir in grilled shrimp and dried oregano, continuing to simmer for another 10 minutes.
  • Remove from heat and let the stew rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

To enhance the flavor of the shrimp, marinate them for 30 minutes before grilling. Ensure not to overcook the shrimp on the grill to maintain their tenderness. You can substitute fish stock with chicken stock if desired. Adjust the spice levels to taste by adding more smoked paprika or a pinch of cayenne pepper.
