Ingredients
  

  • 1 pound ground beef
  • 1 cup green lentils
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 clove garlic minced
  • 1 carrot diced
  • 1 celery stalk diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cup beef broth
  • 1 can diced tomatoes 14.5 ounces
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sauté until the onion is translucent.
  • Add the ground beef to the pot and cook until browned.
  • Stir in the diced carrot and celery, cooking for an additional 5 minutes.
  • Mix in the cumin, smoked paprika, salt, and black pepper.
  • Add the green lentils, beef broth, and diced tomatoes to the pot and bring to a boil.
  • Reduce heat, cover, and let simmer for 35 minutes, stirring occasionally.
  • Check the lentils for tenderness, and continue to cook if necessary.
  • Remove from heat and let the soup rest for 10 minutes.
  • Garnish with fresh parsley before serving.

Notes

For the best results, ensure that the lentils are thoroughly rinsed before adding them to the soup to remove any debris. You can adjust the seasoning to taste, and adding a splash of lemon juice at the end can brighten the flavors. If you'd like a spicier kick, consider adding a pinch of red pepper flakes.
