Ingredients
  

  • 1 pound ground beef
  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 poblano peppers roasted and diced
  • 1 can diced tomatoes 14.5 ounces
  • 4 cup beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • salt to taste
  • black pepper to taste
  • 1/2 cup corn kernels
  • 1/2 cup cooked black beans
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic, sauté until soft.
  • Add ground beef, cook until browned.
  • Stir in roasted poblano peppers and diced tomatoes.
  • Pour in beef broth and bring to a simmer.
  • Add cumin, chili powder, salt, and black pepper.
  • Stir in corn and black beans, cook for 10 more minutes.
  • Remove from heat and let the soup rest for 5 minutes.
  • Garnish with fresh cilantro before serving.

Notes

For best results, roast the poblano peppers under a broiler or directly on a gas flame until the skin is charred, then peel off the skin to enhance their flavor. Adjust the seasoning to your taste and feel free to add a pinch of cayenne pepper for extra heat. Serve with warm tortillas or crusty bread for a complete meal.
