Ground Beef Potato Stew

Ingredients
  

  • 1 pound ground beef
  • 4 cup potatoes peeled and diced
  • 1 cup carrots sliced
  • 1 cup onion chopped
  • 3 clove garlic minced
  • 4 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the ground beef to the pot and cook until browned, breaking it up with a wooden spoon.
  • Remove the cooked beef and set aside, leaving the drippings in the pot.
  • Add the onions and garlic to the pot and sauté until the onions are translucent.
  • Stir in the carrots and cook for an additional 5 minutes.
  • Return the cooked beef to the pot and mix well.
  • Add the potatoes, beef broth, and tomato paste, and stir until combined.
  • Season with salt, pepper, and thyme.
  • Bring the stew to a boil, then reduce heat and let it simmer for 30 minutes, or until the potatoes are tender.
  • Remove from heat and let the stew rest for 5 minutes before serving.

Notes

To enhance the flavor, you can add a splash of Worcestershire sauce or a bay leaf during cooking. If you prefer a thicker stew, mash some of the potatoes in the pot after cooking. Additionally, adjusting the seasoning to your taste and adding your favorite herbs can personalize the dish further.
