Ingredients
  

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 cup frozen peas

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic to the pot, sautéing until the onion is translucent.
  • Add the ground chicken to the pot, cooking until it is browned and cooked through.
  • Stir in the sliced carrots and celery, cooking for an additional 5 minutes.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Season with salt, black pepper, thyme, and parsley.
  • Reduce the heat to a simmer and cook for 20 minutes until the vegetables are tender.
  • Stir in the frozen peas and cook for an additional 5 minutes.
  • Remove the pot from heat and let the soup rest for 5 minutes before serving.
