Ingredients
  

  • 1 pound ground turkey
  • 2 large sweet potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • 1/4 cup chicken broth

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and minced garlic to the skillet, sautéing until translucent.
  • Add ground turkey to the skillet and cook until browned.
  • Stir in salt, black pepper, paprika, and thyme, mixing well.
  • Add diced sweet potatoes to the skillet and stir to combine.
  • Pour in chicken broth, stirring to ensure even distribution.
  • Transfer the mixture into the baking dish and spread evenly.
  • Sprinkle shredded cheddar cheese over the top of the mixture.
  • Bake in the preheated oven for 45 minutes or until sweet potatoes are tender.
  • Remove from the oven and allow to rest for 5 minutes before serving.

Notes

For an added flavor boost, consider using smoked paprika instead of regular paprika. You can also substitute ground turkey with ground chicken or beef if preferred. Ensure that sweet potatoes are cut into small, even pieces to guarantee they cook thoroughly and evenly. If you want extra creaminess, add a dollop of sour cream or Greek yogurt on top when serving.
