  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 2 clove garlic minced

  • 1 teaspoon salt

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic, sauté until onion is translucent.
  • Stir in diced ham and cook for 3 minutes.
  • Add corn kernels, chicken broth, and diced potatoes to the pot.
  • Bring mixture to a boil, then reduce heat and simmer for 15 minutes.
  • Pour in heavy cream and season with salt and black pepper.
  • Simmer for an additional 5 minutes, stirring occasionally.
  • Remove from heat and let the soup rest for 5 minutes.
  • Garnish with chopped fresh parsley before serving.

Notes

For a richer flavor, consider using smoked ham or adding a pinch of smoked paprika. If you prefer a thicker chowder, mash some of the cooked potatoes before adding the cream. Always taste and adjust the seasoning before serving to suit your preference.
