Ingredients
  

  • 2 tablespoon olive oil
  • 1 large onion diced
  • 3 clove garlic minced
  • 2 medium carrot sliced
  • 2 stalk celery sliced
  • 1 pound ham diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4 cup chicken broth
  • 3 cup water
  • 2 can white beans drained and rinsed
  • 1/4 teaspoon black pepper
  • salt to taste
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large soup pot over medium heat.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for 1 minute until fragrant.
  • Add the sliced carrots and celery, and cook for another 5 minutes.
  • Add the diced ham and cook for 3 minutes, stirring occasionally.
  • Sprinkle in the dried thyme, rosemary, and add the bay leaf.
  • Pour in the chicken broth and water, and bring to a boil.
  • Reduce the heat to low and stir in the drained white beans.
  • Season with black pepper and salt to taste.
  • Cover the pot and let the soup simmer for 1 hour, stirring occasionally.
  • Remove the bay leaf and discard it.
  • Stir in the chopped fresh parsley and let the soup rest for 10 minutes before serving.

Notes

For the best flavor, use a good quality ham and consider using homemade chicken broth. You can also adjust the consistency of the soup by adding more water if needed. Feel free to add additional vegetables like spinach or kale for extra nutrients. The soup can be stored in the refrigerator for up to 3 days or frozen for future meals.
