Ingredients
  

  • 2 tablespoon olive oil
  • 1 cup onion chopped
  • 1 cup celery diced
  • 2 cup potatoes peeled and diced
  • 2 cup ham cooked and diced
  • 4 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup corn kernels fresh or frozen
  • 2 tablespoon flour
  • 2 tablespoon butter
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and diced celery, sauté until softened.
  • Stir in diced potatoes and cook for 5 minutes.
  • Add diced ham and chicken broth, bring to a boil.
  • Reduce heat and simmer for 15 minutes until potatoes are tender.
  • In a small saucepan, melt butter and whisk in flour to create a roux.
  • Slowly add heavy cream to the roux, stirring constantly until thickened.
  • Pour the cream mixture into the pot, stirring to combine.
  • Add salt, pepper, and corn kernels, cook for an additional 5 minutes.
  • Remove from heat and let the soup rest for 5 minutes.
  • Ladle into bowls and garnish with fresh parsley before serving.

Notes

For the best flavor, use a good quality smoked ham. If you prefer a thicker soup, you can increase the amount of potatoes or reduce the amount of broth slightly. This soup can also be made a day ahead; the flavors will deepen as it sits. Reheat gently over low heat, adding a splash of cream or milk if it thickens too much.
