Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 clove garlic minced
  • 1 medium head cabbage chopped
  • 2 cup beef broth
  • 1 can diced tomatoes 14.5 ounces
  • 2 carrot sliced
  • 2 stalk celery chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef to the pot and cook until browned.
  • Remove beef and set aside, then add onion and garlic to the pot and sauté until onions are translucent.
  • Return the beef to the pot and add the chopped cabbage, beef broth, diced tomatoes, carrots, and celery.
  • Season with salt, black pepper, dried thyme, and add the bay leaf.
  • Bring the mixture to a boil, then reduce heat to low and cover the pot.
  • Simmer for 20-25 minutes until the vegetables are tender.
  • Remove the bay leaf before serving.
  • Let the soup rest for 5 minutes before serving to enhance the flavors.

Notes

For a richer flavor, consider browning the ground beef thoroughly before adding other ingredients. You can adjust the seasoning to your taste, and if you prefer a spicier soup, add a pinch of red pepper flakes. This soup stores well in the refrigerator for up to three days, making it perfect for meal prep.
