Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 cup onion diced
  • 1 can diced tomatoes with green chilies 10 oz
  • 16 ounces Velveeta cheese cubed
  • 1 cup cheddar cheese shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add ground beef and cook until browned, breaking up with a wooden spoon.
  • Drain any excess fat from the skillet.
  • Transfer the cooked beef to the Crockpot.
  • Add diced onion, diced tomatoes with green chilies, and Velveeta cheese to the Crockpot.
  • Sprinkle in garlic powder, chili powder, salt, and black pepper.
  • Stir to combine all ingredients.
  • Set the Crockpot on low and cook for 2 hours, stirring occasionally.
  • Add shredded cheddar cheese and stir until melted.
  • Allow the dip to rest for 10 minutes before serving.

Notes

For best results, use freshly grated cheddar cheese as it melts more smoothly than pre-shredded cheese. Adjust the level of spiciness by using mild or hot diced tomatoes with green chilies according to your preference. Serve the dip warm with tortilla chips, bread, or vegetable sticks for dipping.
