Ingredients
  

  • 1 pound ground beef
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 1 packet taco seasoning
  • 1 can corn drained
  • 1 can black beans drained and rinsed
  • 1 cup salsa
  • 1 package cornbread mix
  • 1/3 cup milk
  • 1 egg
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a skillet, cook the ground beef over medium heat until browned, about 5-7 minutes.
  • Add chopped onion and bell pepper to the skillet and sauté until softened.
  • Stir in taco seasoning, corn, black beans, and salsa, and cook for another 5 minutes.
  • Transfer the beef mixture to a baking dish and spread evenly.
  • In a mixing bowl, combine cornbread mix, milk, and egg, and mix until smooth.
  • Pour the cornbread batter over the beef mixture in the baking dish.
  • Sprinkle shredded cheddar cheese on top of the cornbread batter.
  • Bake in the preheated oven for 25-30 minutes, or until golden brown.
  • Allow the casserole to rest for 5 minutes before serving.

Notes

For best results, ensure that the beef is thoroughly cooked and drained of excess fat before adding other ingredients. You can customize the spiciness by choosing a mild or hot salsa according to your preference. Be sure to let the casserole rest to allow the flavors to meld and the cornbread to set properly.
