Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 6 cups beef broth
  • 1 can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups egg noodles
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, and sauté until fragrant.
  • Stir in carrots and celery, cooking until they begin to soften.
  • In a separate skillet, brown the ground beef until fully cooked, then drain excess fat.
  • Add the cooked beef to the pot with the vegetables.
  • Pour in beef broth and diced tomatoes, stirring to combine.
  • Season the mixture with basil, oregano, salt, and pepper.
  • Bring the soup to a boil, then reduce heat to simmer for 15 minutes.
  • Add egg noodles to the pot and cook until tender, about 7 minutes.
  • Stir in fresh parsley before removing from heat.
  • Allow the soup to rest for 5 minutes before serving.

Notes

For best results, use lean ground beef to minimize excess grease in the soup. Adjust the seasoning to taste, and feel free to add more herbs or vegetables like spinach for added flavor and nutrition. If you prefer a thicker soup, consider adding a slurry of cornstarch and water near the end of cooking.
