Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 1 can diced tomatoes (14.5 ounces)
  • 4 cups beef broth
  • 1 cup pasta uncooked
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned, breaking it apart with a wooden spoon.
  • Stir in diced onion, minced garlic, carrots, and celery, and cook until softened.
  • Pour in the diced tomatoes and beef broth.
  • Bring the mixture to a boil.
  • Add the pasta and Italian seasoning to the pot.
  • Reduce heat and simmer for 15-20 minutes until pasta is cooked.
  • Stir in frozen peas and cook for an additional 5 minutes.
  • Season with salt and pepper to taste.
  • Remove from heat and let the soup rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

For an added depth of flavor, try browning the ground beef in batches to ensure it develops a nice crust. You can also substitute ground turkey for a lighter version. If you prefer a thicker soup, consider reducing the amount of beef broth or letting it simmer a little longer. Adjust the pasta type and amount according to your preference, and feel free to add more vegetables like bell peppers or mushrooms for extra nutrition.
