Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 1 can diced tomatoes 14.5 ounces
  • 2 medium potatoes diced
  • 2 medium carrots sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup frozen peas

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned, breaking it apart with a wooden spoon.
  • Add chopped onion and minced garlic, cooking until softened.
  • Pour in beef broth and diced tomatoes, stirring to combine.
  • Add diced potatoes and sliced carrots to the pot.
  • Season with salt, pepper, and Italian seasoning.
  • Bring stew to a boil, then reduce heat to a simmer.
  • Cover and cook for 25 minutes until vegetables are tender.
  • Stir in frozen peas and cook for an additional 5 minutes.
  • Remove from heat and let stew rest for 5 minutes before serving.

Notes

For a thicker stew, mash some of the potatoes against the side of the pot or add a cornstarch slurry towards the end of cooking. Adjust the seasoning to taste and consider adding a splash of Worcestershire sauce for extra depth of flavor. This stew can also be made ahead and stored in the refrigerator for up to 3 days; it often tastes better the next day as the flavors meld.
