Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 1 green bell pepper chopped
  • 1 can diced tomatoes 14.5 ounces
  • 4 cups beef broth
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups frozen mixed vegetables
  • 1 cup elbow macaroni

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned, breaking it up with a wooden spoon.
  • Drain excess fat from the pot.
  • Add onion and garlic to the pot and sauté until fragrant.
  • Stir in carrots, celery, and green bell pepper, and cook for 5 minutes.
  • Add diced tomatoes, beef broth, and water to the pot.
  • Season the soup with salt, black pepper, basil, and oregano.
  • Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
  • Stir in frozen mixed vegetables and elbow macaroni.
  • Continue to cook for 10 minutes or until the macaroni is tender.
  • Remove the pot from heat and let the soup rest for 5 minutes before serving.

Notes

For added flavor, consider browning the ground beef with a dash of Worcestershire sauce. You can also customize the vegetables based on your preference or seasonal availability. If you prefer a thicker soup, simmer it longer, or add a tablespoon of flour mixed with water to thicken. Adjust the seasoning based on your taste, and feel free to garnish with fresh parsley or grated cheese before serving.
