Ingredients
  

  • 4 pork chops
  • 1 tablespoon olive oil
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1/4 cup pineapple chunks
  • Salt and pepper to taste
  • 2 tablespoons green onions sliced

Instructions
 

  • Season the pork chops with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the pork chops to the skillet and cook for 5-6 minutes on each side until browned.
  • Remove the pork chops from the skillet and set aside.
  • In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, ground ginger, and garlic powder.
  • Pour the pineapple juice mixture into the skillet and bring to a simmer.
  • In a small bowl, mix cornstarch and water until smooth, then add to the skillet.
  • Stir the sauce until it thickens, about 2-3 minutes.
  • Return the pork chops to the skillet, coating them with the sauce, and add pineapple chunks.
  • Simmer for an additional 5-7 minutes until the pork chops are cooked through.
  • Remove the skillet from heat and let the pork chops rest for 5 minutes.
  • Garnish with sliced green onions before serving.

Notes

For best results, ensure that the pork chops are of even thickness to promote uniform cooking. Letting the sauce thicken properly will enhance the flavor and ensure it clings well to the pork chops. Adjust the sweetness by adding more or less brown sugar to suit your taste preferences.
