Ingredients
  

  • 1 cup unsweetened applesauce
  • 1/2 cup honey
  • 1/4 cup coconut oil melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions
 

  • Preheat the oven to 350°F (175°C) and line the muffin tin with muffin liners.
  • In a large mixing bowl, whisk together the applesauce, honey, coconut oil, eggs, and vanilla extract until well combined.
  • In a separate bowl, mix the whole wheat flour, rolled oats, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  • Divide the batter evenly among the prepared muffin liners.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, ensure that all ingredients are at room temperature before mixing. You can enhance the flavor by adding a handful of chopped nuts or raisins to the batter. These muffins are best stored in an airtight container at room temperature for up to three days or in the refrigerator for a longer shelf life.
