Healthy Cabbage Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium carrot sliced
  • 2 stalks celery sliced
  • 1 medium green cabbage chopped
  • 1 can diced tomatoes 14.5 oz
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • Add the sliced carrot and celery, cooking for another 5 minutes.
  • Stir in the chopped cabbage and cook for 2-3 minutes until slightly softened.
  • Pour in the diced tomatoes and vegetable broth.
  • Add thyme, paprika, salt, and pepper, then stir well.
  • Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes.
  • Remove from heat and let the soup rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

For an enhanced flavor, consider adding a splash of apple cider vinegar or a squeeze of lemon juice just before serving to brighten the taste. If you prefer a heartier soup, add a can of drained and rinsed beans or a handful of cooked quinoa. Adjust seasonings to your taste preference, and feel free to add more herbs like basil or oregano for additional flavor.
