Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can crushed tomatoes 28 ounces
  • 1 can kidney beans rinsed and drained
  • 1 can black beans rinsed and drained
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper optional

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the ground turkey to the pot and cook until browned, breaking it up with a wooden spoon.
  • Add the diced onion and minced garlic to the pot, cooking until the onion is translucent.
  • Stir in the chopped red and green bell peppers and cook for a few more minutes.
  • Mix in the chili powder, ground cumin, paprika, salt, and black pepper.
  • Pour in the crushed tomatoes, kidney beans, black beans, and chicken broth.
  • Add the tomato paste, dried oregano, and cayenne pepper, if using.
  • Stir well to combine all ingredients and bring the mixture to a boil.
  • Reduce the heat to low and let the chili simmer for 30 minutes, stirring occasionally.
  • Remove from heat and let the chili rest for 5 minutes before serving.

Notes

For an even richer flavor, prepare this chili a day in advance and reheat it before serving, as the flavors will meld together beautifully. You can adjust the spice level by adding more or less cayenne pepper according to your taste preference. This chili can also be made in a slow cooker by browning the turkey and sautéing the veggies first, then transferring everything to the slow cooker to cook on low for 6-8 hours.
