Ingredients
  

  • 1 1/2 cups crushed Oreo cookies
  • 1/4 cup unsalted butter melted
  • 24 ounces cream cheese softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/4 cup sour cream
  • 1/4 cup buttermilk
  • 2 tablespoons red food coloring
  • 1/4 cup cocoa powder
  • 1 cup fresh strawberries hulled and sliced
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar

Instructions
 

  • Preheat the oven to 325°F (163°C).
  • Combine crushed Oreo cookies and melted butter in a bowl and mix until well combined.
  • Press the cookie mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  • In a large mixing bowl, beat the cream cheese until smooth using an electric mixer.
  • Add sugar and vanilla extract to the cream cheese, and beat until fully incorporated.
  • Add eggs one at a time, mixing on low speed after each addition just until blended.
  • Blend in the sour cream, buttermilk, red food coloring, and cocoa powder until smooth.
  • Pour the cream cheese mixture over the prepared crust in the springform pan.
  • Bake in the preheated oven for 1 hour or until the center is set and the top appears slightly dry.
  • Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
  • Remove the cheesecake from the oven and refrigerate for at least 3 hours to set completely.
  • Before serving, beat heavy cream and powdered sugar together until soft peaks form.
  • Top the cheesecake with the whipped cream and arrange fresh strawberries on top.
  • Release the cheesecake from the springform pan, slice, and serve chilled.

Notes

For best results, ensure that all your ingredients are at room temperature before starting, as this helps create a smoother cheesecake batter. Additionally, avoid opening the oven door during baking to prevent the cheesecake from cracking. If you prefer a more intense red velvet flavor, you can increase the cocoa powder slightly, but be cautious not to overpower the balance of flavors.
