Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 can diced tomatoes 14 ounces
  • 4 cups chicken broth
  • 8 lasagna noodles broken into pieces
  • 1/2 cup Parmesan cheese grated
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground turkey and cook until browned.
  • Stir in onion and garlic, cooking until onion is translucent.
  • Add dried basil, oregano, and red pepper flakes, stirring to combine.
  • Pour in diced tomatoes and chicken broth, bringing to a simmer.
  • Add broken lasagna noodles and cook until tender.
  • Stir in Parmesan cheese and season with salt and pepper.
  • Add spinach and cook until wilted.
  • Remove pot from heat and let soup rest for 5 minutes.
  • Serve soup in bowls topped with a dollop of ricotta cheese.

Notes

To enhance the flavor, consider adding a splash of red wine to the broth while it simmers. Ensure the lasagna noodles are broken into small, manageable pieces to prevent clumping. Adjust the spice level by adding more or fewer red pepper flakes according to your taste preference. For an extra protein boost, you can substitute or add cooked lentils or beans.
