Ingredients
  

  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped walnuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease the loaf pan.
  • In a large mixing bowl, whisk together pumpkin puree, vegetable oil, eggs, and sugar until smooth.
  • In another bowl, mix together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chopped walnuts if using.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes.
  • Remove the bread from the pan and let it cool completely on a wire rack.

Notes

For best results, ensure all ingredients are at room temperature before mixing to achieve a smoother batter. You can also add chocolate chips or dried cranberries for a different flavor profile. Store the pumpkin bread in an airtight container to keep it moist for up to three days.
