Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 16 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1/4 cup confectioners' sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine flour, baking powder, salt, and 1/2 teaspoon of cinnamon.
  • In a medium mixing bowl, cream together 1 cup of butter and 1 1/2 cups of granulated sugar until light and fluffy.
  • Add eggs and vanilla extract to the butter mixture and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form the dough.
  • Press half of the dough evenly into the bottom of the 9x13 inch baking dish.
  • In a large mixing bowl, beat cream cheese and sour cream until smooth.
  • Add confectioners' sugar to the cream cheese mixture and mix until combined.
  • Spread the cream cheese mixture evenly over the pressed dough in the baking dish.
  • Crumble the remaining dough over the cream cheese layer.
  • Mix 1 tablespoon of cinnamon and 1/4 cup of granulated sugar in a small bowl, then sprinkle it over the dough.
  • Bake in the preheated oven for 45 minutes or until the top is golden brown.
  • Remove from the oven and allow to cool for at least 2 hours before cutting into bars.

Notes

For best results, ensure the cream cheese is thoroughly softened before mixing to avoid lumps in the cheesecake layer. Allowing the bars to cool completely before cutting helps them to set firmly and makes for cleaner slices. If you want a stronger cinnamon flavor, feel free to increase the amount in the sugar topping.
