Homemade Turkey Noodle Soup

Ingredients
  

  • 2 tablespoon olive oil
  • 1 large onion diced
  • 3 medium carrots sliced
  • 3 stalk celery sliced
  • 3 clove garlic minced
  • 8 cup turkey stock
  • 3 cup cooked turkey shredded
  • 2 cup egg noodles
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion, sliced carrots, and sliced celery to the pot and sauté until softened, about 5 minutes.
  • Stir in minced garlic and cook for another minute.
  • Pour in turkey stock and bring the mixture to a boil.
  • Once boiling, reduce heat to a simmer and add shredded turkey, salt, black pepper, and dried thyme.
  • Let the soup simmer for 45 minutes to allow flavors to meld.
  • In a separate saucepan, cook egg noodles according to package instructions, then drain.
  • Add cooked egg noodles to the soup and stir well.
  • Simmer the soup for an additional 10 minutes.
  • Remove from heat and let the soup rest for 10 minutes.
  • Stir in fresh parsley before serving.

Notes

For added depth of flavor, consider roasting the turkey bones and using them to make a homemade stock. Additionally, if you prefer a thicker soup, you can mash some of the cooked vegetables or add a bit of cornstarch slurry. Always taste and adjust seasonings before serving to match your preference.
