Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup honey
  • 1/4 cup unsalted butter melted
  • 2 large eggs

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Grease a muffin tin or line it with paper liners.
  • In a mixing bowl, whisk together flour, cornmeal, sugar, baking powder, and salt.
  • In a separate bowl, mix milk, honey, melted butter, and eggs until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Divide the batter evenly among the muffin cups in the prepared tin.
  • Bake in the preheated oven for 15 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.

Notes

For best results, avoid over-mixing the batter as it can make the muffins dense. If you prefer a sweeter muffin, you can increase the honey to 1/3 cup. Serve warm for the best taste and texture.
