Ingredients
  

  • 2 pounds potatoes quartered
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, whisk together olive oil, honey, Dijon mustard, garlic powder, salt, and black pepper.
  • Add the quartered potatoes to the bowl and toss until they are evenly coated with the honey mustard mixture.
  • Spread the coated potatoes in a single layer on the large baking sheet.
  • Bake in the preheated oven for 30-40 minutes, or until the potatoes are golden and tender.
  • Remove from the oven and let the potatoes rest for 5 minutes.
  • Garnish with chopped fresh parsley before serving.

Notes

For best results, ensure that the potatoes are evenly cut into similar-sized pieces to promote uniform cooking. If you prefer a crispier texture, you can flip the potatoes halfway through the baking time. Adjust the seasoning to taste, and feel free to add more garlic or mustard depending on your flavor preference.
