Ingredients
  

  • 1/4 cup honey mustard sauce
  • 2 tablespoons olive oil
  • 1 pound chicken breast sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh spinach chopped
  • 8 small corn tortillas
  • 1/2 cup shredded cheese
  • 1 avocado sliced
  • 1/4 cup red onion thinly sliced

Instructions
 

  • In a mixing bowl, whisk together honey mustard sauce, olive oil, garlic powder, salt, and black pepper.
  • Add the sliced chicken breast to the bowl and coat them evenly with the mixture.
  • Heat a skillet over medium heat and cook the marinated chicken for about 8-10 minutes until fully cooked.
  • Add chopped spinach to the skillet and cook for an additional 2 minutes until wilted.
  • Warm the corn tortillas on a separate skillet or in a microwave.
  • Place spinach and chicken mixture onto each tortilla.
  • Sprinkle shredded cheese on top of the chicken and spinach.
  • Garnish each taco with avocado slices and red onion.
  • Let the tacos rest for 5 minutes before serving.

Notes

For a tangier taste, you can add a squeeze of lime juice over the tacos just before serving. Ensure the chicken is fully cooked before adding the spinach to avoid overcooking and to maintain the fresh green color of the spinach. Experiment with different cheese types for varied flavor profiles.
