Ingredients
  

  • 1 pound roast beef thinly sliced
  • 8 slices white bread
  • 2 tablespoons butter softened
  • 1 cup beef gravy
  • 4 slices provolone cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Heat olive oil in a skillet over medium heat.
  • Season the roast beef with salt and pepper.
  • Sear the beef in the skillet until browned on all sides.
  • Transfer the beef to a baking sheet and roast in the oven for 30 minutes.
  • Remove the beef from the oven and let it rest for 10 minutes.
  • Butter each slice of bread on one side.
  • Place 4 slices of bread, buttered side down, on a cutting board.
  • Layer each with roast beef, a slice of provolone cheese, and a spoonful of gravy.
  • Top with the remaining slices of bread, buttered side up.
  • Heat the skillet over medium heat and grill each sandwich until golden brown on both sides.
  • Serve hot with extra gravy on the side.

Notes

For the best results, let the roast beef come to room temperature before cooking to ensure even cooking. Use a meat thermometer to check that the internal temperature reaches 145°F (63°C) for medium-rare. Customize your sandwich with additional toppings such as sautéed onions or mushrooms for added flavor.
