Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 pint vanilla ice cream softened

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  • Bake for 8-10 minutes, or until the cookies are set around the edges.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Once cooled, scoop a generous amount of softened vanilla ice cream onto the flat side of one cookie.
  • Top with another cookie, pressing gently to spread the ice cream evenly to the edges.
  • Wrap each sandwich in parchment paper and freeze for at least 1 hour before serving.

Notes

For extra tips, ensure the cookies are completely cooled before adding the ice cream to prevent melting. If you prefer a firmer ice cream filling, allow the sandwiches to freeze longer. You can also customize your ice cream sandwiches by rolling the edges in mini chocolate chips, sprinkles, or nuts before freezing for added flavor and texture.
