Ingredients
  

  • 6 pounds apples peeled, cored, and chopped
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract

Instructions
 

  • Peel, core, and chop the apples into small pieces.
  • Place the apples in the Instant Pot.
  • Add granulated sugar, brown sugar, ground cinnamon, ground cloves, ground nutmeg, and salt to the pot.
  • Stir the ingredients well to ensure the apples are evenly coated.
  • Secure the lid on the Instant Pot and set to 'Manual' mode for 15 minutes on high pressure.
  • Once cooking is complete, allow the pressure to release naturally for 20 minutes, then quick release any remaining pressure.
  • Open the lid and set the Instant Pot to 'Sauté' mode.
  • Stir in the vanilla extract.
  • Use a blender or immersion blender to puree the apple mixture until smooth.
  • Continue to cook on 'Sauté' mode for an additional 45 minutes, stirring occasionally, until thickened.
  • Let the apple butter cool for 1 hour before transferring to an airtight container.

Notes

For the best results, choose a variety of apples for a more complex flavor profile. If you prefer a smoother apple butter, blend longer until you achieve the desired consistency. You can adjust the sweetness by varying the amount of sugar to your taste. Store the apple butter in the refrigerator for up to two weeks or freeze it for longer storage.
