Ingredients
  

  • 3 pound beef chuck roast cut into chunks
  • 2 tablespoon vegetable oil
  • 2 dried guajillo chiles stemmed and seeded
  • 2 dried ancho chiles stemmed and seeded
  • 1 dried chipotle chile stemmed and seeded
  • 4 clove garlic peeled
  • 1 large onion quartered
  • 2 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup apple cider vinegar
  • 3 cup beef broth
  • 2 bay leaves
  • Salt to taste
  • Fresh cilantro chopped, for garnish
  • Lime wedges for serving
  • Corn tortillas for serving

Instructions
 

  • Set the Instant Pot to sauté mode and heat the vegetable oil.
  • Brown the beef chunks in batches and set aside.
  • In the same pot, add the guajillo, ancho, and chipotle chiles, and toast until fragrant.
  • Add garlic, onion, oregano, cumin, black pepper, cinnamon, and vinegar to the pot.
  • Pour in the beef broth and add the bay leaves.
  • Return the beef chunks to the pot and stir to combine.
  • Secure the lid and set the Instant Pot to high pressure for 45 minutes.
  • Allow the pressure to release naturally for 15 minutes before quick-releasing any remaining pressure.
  • Remove the beef and shred with two forks.
  • Strain the sauce and blend until smooth.
  • Return the sauce and shredded beef to the pot and set to sauté mode for an additional 10 minutes.
  • Adjust seasoning with salt if necessary.
  • Serve the birria in bowls, garnished with cilantro and lime wedges, alongside corn tortillas.

Notes

For the best flavor, allow the birria to rest after cooking to let the flavors meld together. Leftovers can be stored in the refrigerator for up to three days and tend to taste even better the next day. Ensure tortillas are warmed before serving for the best texture and taste.
