Equipment

  • 1 Instant Pot
  • 1 Cutting board
  • 1 Knife
  • 1 Wooden spoon
  • 1 can opener

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes
  • 1 cup beef broth

Instructions

  • Set the Instant Pot to sauté mode and add olive oil.
  • Once the oil is hot, add the ground beef and cook until browned.
  • Add the onion, garlic, and bell pepper to the pot and sauté until softened.
  • Stir in chili powder, cumin, paprika, cayenne pepper, salt, and black pepper.
  • Add the kidney beans, black beans, diced tomatoes, and beef broth to the Instant Pot.
  • Stir well to combine all ingredients.
  • Secure the lid on the Instant Pot and set to high pressure for 15 minutes.
  • Once cooking is complete, allow the pressure to release naturally for 10 minutes.
  • Open the lid carefully and stir the chili before serving.

Notes

For a thicker chili, you can use the sauté function after cooking to evaporate some liquid. Feel free to experiment with additional toppings like shredded cheese, sour cream, or chopped cilantro for extra flavor. If you prefer a milder chili, reduce the cayenne pepper. Adjust the seasoning to taste before serving, as flavors can intensify during cooking.
