Equipment

  • 1 Cutting board
  • 1 measuring cup
  • 1 Wooden spoon
  • 1 Ladle

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 4 medium potatoes peeled and diced
  • 2 cups cooked ham diced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup heavy cream
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion and garlic, sauté until the onion is translucent.
  • Turn off the sauté mode and add chicken broth, potatoes, ham, carrots, celery, salt, pepper, and thyme.
  • Secure the lid and set the Instant Pot to high pressure for 10 minutes.
  • Once cooking is complete, allow a natural release for 10 minutes, then quick release any remaining pressure.
  • Carefully remove the lid and stir in the heavy cream.
  • Use a ladle to serve the soup in bowls and garnish with fresh parsley.

Notes

For a creamier texture, you can mash some of the potatoes with a potato masher before adding the cream. Be sure to dice vegetables evenly for uniform cooking, and adjust seasoning to your preference after cooking. If you prefer a thicker soup, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it in after adding the cream.
