Ingredients
  

  • 2 tablespoon olive oil
  • 1 large onion diced
  • 2 clove garlic minced
  • 2 carrot sliced
  • 2 celery stalk sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 cup chicken broth
  • 2 cup cooked chicken shredded
  • 1 cup pasta small shapes
  • 1 cup spinach chopped
  • 2 tablespoon fresh parsley chopped
  • 1/4 cup Parmesan cheese grated

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic to the pot and sauté until the onion is translucent.
  • Stir in sliced carrots and celery, cooking until they begin to soften.
  • Add dried oregano, dried basil, salt, and black pepper, stirring to combine.
  • Pour in chicken broth and bring the soup to a boil.
  • Reduce heat to a simmer and add shredded chicken to the pot.
  • Add pasta and cook until pasta is al dente.
  • Stir in chopped spinach and simmer for an additional 2 minutes.
  • Remove the pot from heat and let the soup rest for 10 minutes.
  • Serve hot, garnished with fresh parsley and grated Parmesan cheese.

Notes

For optimal flavor, use quality chicken broth and ensure the chicken is tender and juicy. Adjust seasonings to taste, and feel free to add more vegetables or herbs as desired. If the soup becomes too thick, simply add more broth or water to reach the desired consistency.
