  • 1 Cutting board
  • 1 Chef's knife
  • 1 Mixing bowl
  • 1 measuring cup
  • 1 Wooden spoon or spatula

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Italian dressing
  • 1 can diced tomatoes 14.5 oz, drained
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley chopped

Instructions

  • Place chicken breasts in the crockpot.
  • In a mixing bowl, combine Italian dressing, diced tomatoes, Parmesan cheese, basil, oregano, garlic powder, onion powder, red pepper flakes, salt, and black pepper.
  • Pour the mixture over the chicken in the crockpot.
  • Cover and cook on low for 6 hours or until the chicken is tender and fully cooked.
  • Sprinkle shredded mozzarella cheese over the chicken in the last 10 minutes of cooking.
  • Once the cheese has melted, turn off the crockpot and let it rest for 10 minutes.
  • Garnish with fresh parsley before serving.

Notes

For best results, make sure to use a high-quality Italian dressing for rich flavor, and try not to lift the lid during cooking to maintain consistent heat. If you prefer more veggies, consider adding sliced bell peppers or mushrooms when you add the chicken.
