Ingredients
  

  • 1 pound Italian sausage casings removed
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup water
  • 4 medium potatoes peeled and diced
  • 1 cup heavy cream
  • 2 cups kale chopped
  • Salt to taste
  • Black pepper to taste
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add Italian sausage and cook until browned, breaking it up with a wooden spoon.
  • Remove sausage from the pot and set aside.
  • In the same pot, add diced onion and sauté until translucent.
  • Add minced garlic and cook for an additional minute.
  • Pour in chicken broth and water, bringing the mixture to a boil.
  • Add diced potatoes to the pot and simmer until tender, about 15 minutes.
  • Stir in heavy cream and bring back to a gentle simmer.
  • Add the cooked sausage and chopped kale to the pot.
  • Season with salt, black pepper, and red pepper flakes to taste.
  • Simmer for another 5 minutes until kale is wilted.
  • Serve hot with a sprinkle of Parmesan cheese on top.

Notes

For a thicker soup, you can mash some of the potatoes before adding the cream. If you prefer a spicier flavor, adjust the red pepper flakes according to your taste. Always taste and adjust the seasoning before serving to ensure the flavors are balanced.
