Italian Seafood Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups seafood stock
  • 1 cup dry white wine
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1 pound mussels, cleaned and debearded
  • 1 pound clams, scrubbed
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound calamari, sliced into rings
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, cut into wedges

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and garlic, and sauté until the onion is translucent.
  • Stir in the diced tomatoes and cook for 5 minutes.
  • Pour in the seafood stock and white wine, and bring to a simmer.
  • Add oregano, thyme, and red pepper flakes to the pot.
  • Add mussels and clams, cover the pot, and cook for 5 minutes until they open.
  • Stir in the shrimp and calamari, and cook until the shrimp turn pink and the calamari is tender.
  • Season the soup with salt and pepper to taste.
  • Remove from heat and let the soup rest for 5 minutes.
  • Garnish with fresh parsley and serve with lemon wedges.

Notes

For the best flavors, use fresh seafood and be sure to clean the mussels and clams thoroughly to remove any grit. Adjust the spice level by adding more or less red pepper flakes. Pair this soup with crusty bread to soak up the delicious broth.
