Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 cup orange icing
  • 1/4 cup black icing

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together butter and sugar until light and fluffy.
  • Beat in the vanilla extract and egg until well combined.
  • In another bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Divide the dough in half, wrap each in plastic wrap, and refrigerate for 30 minutes.
  • Roll out one dough half on a floured surface to 1/4-inch thickness.
  • Use a pumpkin-shaped cookie cutter to cut out cookies and place them on a parchment-lined baking sheet.
  • Bake in the preheated oven for 10-12 minutes or until the edges are light golden.
  • Cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  • Repeat with remaining dough.
  • Once cooled, decorate cookies with orange icing for the pumpkin and black icing for the eyes, nose, and mouth.

Notes

For best results, ensure the dough is evenly rolled out to prevent uneven baking. If you don't have pumpkin-shaped cutters, you can use a round cutter and decorate them with a Jack O Lantern face. Allow the cookies to cool completely before icing to prevent the icing from melting. If desired, add a pinch more spice to enhance the autumn flavors.
