  • 1 Medium saucepan
  • 1 Frying pan
  • 1 Wooden spoon

  • 1 Cutting board

Ingredients
  

  • 200 grams Rice flour
  • 50 grams Tapioca flour
  • 200 ml Water
  • 1 teaspoon Salt
  • 2 tablespoons Sugar
  • 2 tablespoons Coconut milk
  • 100 grams Grated coconut
  • 50 grams Palm sugar shaved
  • 1 teaspoon Vanilla extract
  • 100 grams Banana sliced
  • 1 teaspoon Baking powder
  • 2 tablespoons Cooking oil

Instructions
 

  • In a large mixing bowl, combine rice flour, tapioca flour, salt, and baking powder.
  • Gradually add water while stirring until you get a smooth batter consistency.
  • Stir in coconut milk and vanilla extract until well combined.
  • Heat a frying pan over medium heat and add 1 tablespoon of cooking oil.
  • Pour a ladle of batter onto the frying pan and spread it thinly.
  • Place banana slices on top of the batter and cook until the bottom is golden brown.
  • Flip the pancake and cook the other side until golden brown.
  • Remove the pancake from the pan and set aside on a serving plate.
  • Repeat the process with the remaining batter.
  • In a small saucepan, melt the palm sugar with a bit of water to make a syrup.
  • Drizzle palm sugar syrup over the pancakes.
  • Sprinkle grated coconut on top as a garnish before serving.

Notes

Ensure the frying pan is well-heated before adding the batter to prevent sticking. Adjust the sweetness by adding more or less palm sugar according to your taste preference. You can also vary the toppings by adding chocolate sprinkles or nuts for additional flavor and texture.
