Ingredients
  

  • 1 pound sausage sliced
  • 4 cups chicken broth
  • 2 cups kale chopped
  • 3 medium potatoes diced
  • 1 cup heavy cream
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Heat the large pot over medium heat and add the sliced sausage.
  • Cook the sausage until browned, then remove from the pot and set aside.
  • In the same pot, add the chopped onion and minced garlic, cooking until the onion is translucent.
  • Add the chicken broth, diced potatoes, salt, and black pepper to the pot.
  • Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender.
  • Stir in the chopped kale and cooked sausage, allowing the kale to wilt.
  • Pour in the heavy cream and stir until well combined.
  • Let the soup simmer for an additional 5 minutes for flavors to meld.
  • Remove from heat and let it rest for 5 minutes before serving.
  • Serve hot with a ladle into bowls.

Notes

For best results, use fresh kale as it adds a vibrant flavor and texture to the soup. If you prefer a spicier version, consider using spicy sausage or adding a pinch of red pepper flakes. The soup can be stored in the refrigerator for up to 3 days; simply reheat gently before serving.
