Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 1 can(14.5 ounces) diced tomatoes
  • 1/4 cup tomato paste
  • 1 cup zucchini sliced
  • 1 cup spinach leaves
  • 1/2 cup heavy cream
  • 1/2 cup ricotta cheese
  • 1/2 cup mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and sauté until translucent.
  • Stir in minced garlic, cooking until fragrant.
  • Add ground beef to the pot and cook until browned.
  • Season with oregano, basil, salt, and pepper.
  • Pour in beef broth, diced tomatoes, and tomato paste, stirring to combine.
  • Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  • Add zucchini slices and spinach leaves to the pot.
  • Stir in heavy cream and simmer for an additional 5 minutes.
  • Remove from heat and let the soup rest for 5 minutes.
  • Serve hot, topping each bowl with ricotta, mozzarella, and parmesan cheese.

Notes

To enhance the flavor further, consider adding a pinch of red pepper flakes for a bit of heat. Use freshly grated cheese for the best texture and flavor. If you prefer a thicker soup, let it simmer longer to reduce the liquid. Adjust the seasoning to taste before serving.
